Vietnamese Mint Dressing

Ingredients

1 large handful of spinach (stems and leaves - no wastage)

1/2 large tomato, chopped

Juice of 1 large lemon

2 Tbsp olive oil*

6 large vietnamese mint leaves

1 heaped Tsp almonds

Method

Add all ingredients to a blender or bullet and blend until smooth.

DONE!

Keep in the fridge in a jar for anytime use.

Triple ingredients for family-size dressing.

*Olive oil can be substituted for cold pressed flax seed (linseed), chia, or hemp oil for added plant-based essential fatty acids including omega-6 alpha-linoleic acid (ALA), omega-3 linoleic acid (LA), and its derivative polyunsaturated fatty acid, gamma-linolenic acid (GLA).
